blueberries





We cannot get too many blueberries this summer. Owl seems to be following in Pumpkin's Little Sal footsteps- all eating and no kerplunking. Two trips to our nearest u-pick farm so far and I see many more until the end of the season in mid-July.


Our perfected muffin recipe:


Combine 1/2 cup orange or pineapple or pear or . . . juice and 1/2 cup oats and set aside


1 1/2 cups flour (I mix white and whole wheat or buckwheat or . . .)


1 1/4 t. baking powder


1/4 t. baking soda


1/2 t. salt


2 T. sugar


1 T. ground flax seed


Stir above and then add:


1 egg


1/4 cup canola oil


1/3 cup applesauce


Stir and then add oat and juice mixture and stir.


Add 1 1/2 cups blueberries and stir.


Spoon into muffin pan. Sprinkle cinnamon and sugar on top and bake at 400 for 18 minutes. And then, as young Alybug and Em used to say, "Yum them up."
